Any homemade vinaigrette must include mustard. Either the grainy German kind, or mustard that includes wasabi (oh hell yes). Dayglo "yellow" mustard isn't really mustard...
That's more than a personal preference, that's a food rule! I have never once made a homemade vinaigrette (and that's literally the only salad dressings we use) w/o having some type of real mustard in it. And you can't even taste the mustard, but you need it for a full flavor.

agreed. bright yellow mustard is for picnics only.
